Sharon’s Backyard BBQ Baked Beans
I got the inspiration for this recipe from one of my favorite cookbooks, The Junior League Centennial Cookbook. I would say that this is my riff on the “Rave Review Baked Beans” recipe, but I changed it so much, that I just had to make it into a new recipe.
- 3 slices bacon, chopped
- 1 onion, chopped
- 1 (16 oz) can garbanzo beans
- 1 (16 oz) can kidney beans
- 1 (16 oz) can mixed beans or any bean of choice: white bean, pinto bean, black bean
- 1/2 cup packed light brown sugar
- 1/4 cup molasses (I use Mother’s Molasses)
- 1 teaspoon whole grain mustard (or standard mustard is fine)
- 2 teaspoons Worcestershire sauce
- 1/2 cup ketchup (I use Simply Heinz because it doesn’t have high fructose corn syrup)
- Ground black pepper to taste
1. Preheat the oven to 325 degrees. 2. Sauté the bacon and onion together in a skillet until the onions are soft. 3. Stir together all the beans (after draining and rinsing), brown sugar, molasses, mustard, Worcestershire, ketchup, and black pepper. Add the sautéed onions and bacon to the bean mixture. 4. Pour into a casserole dish. Bake uncovered for 45 minutes. Serves 6-8.
