Get your greens on by wrapping almost anything and everything with delicious and nutritious lettuce wraps. I discovered how easy it is to replace bread and buns with lettuce, and it is now a family favorite. Add variety to your usual sandwiches and burgers, and get the bonus of adding more greens to your diet (most kids are happy to eat their lettuce if a burger is wrapped inside of it). This is also a great gluten-free option.
Keeping your greens fresh and crunchy: The easiest way to have greens ready for wrapping is to buy them on the head (not in the pre-washed packages). On the head will allow for larger pieces, making better wrappers. Wash all of the leaves in cool water and dry with a salad spinner or gently wrap them in a dish towel. After the greens are rather dry, fold a paper towel around them and store in a container or storage bag in the refrigerator for up to a week. Now they are ready any time you want to make a wrap (or salad).
