We’ve been eating a lot of great salads and enjoying the fresh fruit at our farmers market. Lately, we’ve eaten a lot of variations of salads with tomatoes, cucumbers, and carrots from the market. Tomato with mozzarella and basil or just a great green salad with tomatoes, cucumbers, carrots, and feta cheese are a few of our favorites. The berries have been fantastic, so we just eat those plain for snacks and after meals. We’ve also had great peaches and apricots. Again, we’ve just eaten them plain. Most of my friends know I am not a baker, but I am always tempted to try when we have all these great fruits available. I think my family would probably agree it is safer if I just stick to composing delicious fruit salads.
Our family is absolutely reveling in the cornucopia of fruits and vegetables available at the farmers market right now. Since we are in a northern climate, our produce comes into season a little later so we are still enjoying the last of the berries (strawberries, raspberries, blueberries), Washington cherries, peaches, and apricots. I buy almost all our vegetables at the market right now: salad greens, cucumbers, bell peppers, carrots, onions, garlic, summer squash, tomatoes, kale, peas, and potatoes. We add a large bouquet of flowers and then stagger home with our rich and heavy load. On market day I make something using the produce, including gazpacho, zucchini bread, zucchini pancakes, and kale chips. We enjoy pounds of fresh fruit sliced and in smoothies. It’s all so good!
