

This is an easy recipe of compiling ingredients for a fast summer meal. No cooking necessary! Double the recipe for leftovers or a potluck.
- 1 (15-16 ounce) can black beans (or two cups cooked beans), drained
- 1 (10 ounce) package frozen corn (frozen corn will help keep the salad cold for a picnic)
- 1 cucumber, peeled and diced
- 3 medium sized tomatoes, chopped
- 2 green onions or 1/2 small white onion, minced
Dressing
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons catsup (Simply Heinz doesn’t have high fructose corn syrup)
- 1 tablespoon honey
- 1 tablespoon prepared mustard
- 1 teaspoon soy sauce (or Tamari for gluten free option)
- 1 teaspoon Worcestershire
- Coarse salt and freshly ground pepper to taste
Combine the first five ingredients in a medium bowl. Whisk the dressing ingredients together and pour over salad. Gently toss to combine. Serve with grated cheddar cheese and tortilla chips for a “taco” salad.
