We were on vacation this week with my husband’s family, so the title of “What did Kimberly feed her family this week?” doesn’t exactly apply. Every year we all stay together in a rented house and each family unit takes turns cooking so it is a great way to see what everyone else likes to cook and eat. We usually have meals that everyone would normally cook at home anyway.
Monday — This was our night to cook, so no surprise that I chose to make tostadas. I thought it made it easy for everyone to compose their own tostadas how they wanted.
- Tostadas with either ground turkey or grilled, marinated skirt steak
- Pico de gallo
- Black beans
- Shredded cheddar
- Guacamole
- Sour cream
- Sautéed zucchini with corn
Tuesday
- Take-out pizza night
Wednesday
- Grilled chicken souvlaki
- Flatbread and brown rice
- Sautéed zucchini
Thursday
- Pasta with creamy tomato sauce
- Sautéed kale
Friday — Since we were leaving the next day, we didn’t want to leave a lot of leftovers. So, we hit the prepared foods area of the local grocery store for our protein and starch. Then we roasted some vegetables to round out the meal.
- Grilled lemon and garlic chicken
- Garlic mashed potatoes
- Roasted vegetables: broccoli, cauliflower, carrots, and parsnips
Saturday — This is the day we got back home, so we made do with what we had in the house, and with some supplies we ended up with after clearing out the fridge at our rental house.
- Scrambled eggs
- Tortillas
- Black beans
- Lima beans (from the freezer)
- Sautéed kale (with leftover kale from the trip that we brought home)
Sunday
- Grilled marinated chicken thighs
- Quinoa with roasted vegetables
