I was so inspired with last week’s post on summer squash that I went a little nuts at the farmers market and bought a huge pile. You’ll see it played a large role in this week’s menu. Cheers!
Monday – We’ve started a new summer routine of going for an end of the day swim and then having dinner by the pool on Monday nights. I keep it easy with a one-bowl meal. This week I even made it a “meatless Monday” with 7 layer bean dip.
- Layered bean dip:
- Refried beans
- Sour cream
- Mild salsa
- Diced avocados
- Sliced black olives
- Cherry tomatoes
- Shredded cheddar cheese
- Tortilla chips
- Peaches
Tuesday
- Grilled teriyaki chicken thighs
- Brown rice
- Zucchini and yellow squash “fries”
Wednesday
- Black bean and cheese burritos
- Black bean, cheese, salsa tostadas
- Peaches
Thursday
- Roasted chicken breasts (bone-in, skin-on)
- Basmati rice
- Sauteed zucchini
Friday – another one-bowl dinner!
- Gluten-free spaghetti noodles with a sauce of sautéed zucchini, sweet onion, cherry tomatoes, white beans, basil, and olive oil
Saturday – BBQ at the Lake
- Pork ribs
- Corn bread
- Cole slaw
- Grilled zucchini and onion kabobs
- S’mores
Sunday
- Gazpacho
- Black bean and cheese burritos
- Pico de Gallo
- Peaches and Nectarines
