Asparagus is the iconic spring vegetable that signals the annual promise of fresh green vegetables, once again, after the barren fields of winter. Asparagus is an elegant addition to any meal, breakfast to dinner, and is ridiculously easy to prepare. The most important part in preparing good asparagus, is to not over cook it.
Our favorite way to cook asparagus is to roast it with extra virgin olive oil and coarse salt. Thicker stalks are easier for kids to pick up and eat with their fingers (yes, that is okay, they’re eating and enjoying vegetables!) But thick or thin is a recipe and personal preference.
