This savory salad is so delicious and unbelievably simple. Chop the ingredients, blend the dressing, and you’re done! This salad holds up well in the refrigerator*, so it’s a good one to pack for lunch, or take to a picnic or potluck. The small chopped pieces make it easy for all ages to eat, and a mouthful of flavor in every bite. Pair it with a bowl of tomato soup or warm bread for a quick lunch or dinner.
Chopped Salad for 4
Salad:
- 2 heads romain lettuce, chopped fine
- 1/4 cup Italian flat leaf parsley, chopped
- 1/4 red onion, minced
- 8 ounces fresh mozzarella cheese, grated
- 1 red bell pepper, minced
- 1 can garbanzo beans, drained and rinsed
- 8 ounces sliced Italian dry salami, chopped fine
Dressing:
- 2-3 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/2 cup good quality extra virgin olive oil
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon coarse salt
- 1 tablespoon Dijon mustard (I use Grey Poupon)
- 1 teaspoon Worchestershire sauce
- Blend all dressing ingredients in blender, or whisk vigorously, until emulsified. 2. Toss all the ingredients together, including salad dressing*, gently, until well blended. Enjoy!
*If not serving the salad immediately, hold the dressing in a separate container, keep the salad and dressing in the refrigerator until serving, and then combine, toss, and serve.
