Find of the Week: BANANA “ICE CREAM”
As an after school activity this fall, my daughter took a class called Food Matters, offered by the fantastic food educators from Local Matters, a non-profit organization here in Columbus dedicated to education and access to healthy, sustainable food.
One of my favorite ideas that she came home talking about is banana “ice cream.” It is simply blended up banana–either frozen slices that are blended (this will give you a fluffier consistency), or banana puree that you freeze for a little bit to get it cold (our option when I forget to freeze the slices ahead of time).
Since we normally eat fruit after dinner anyway, I was willing to give it a try, and it was hit with both girls. We’ve made it several times since, even adding just a few chocolate chips for fun sometimes. With all the treats and desserts they are getting during the holidays, I love having a healthy, yet delicious, alternative to offer that they think is just as fun.
