Stock your refrigerator and freezer with lots of food storage containers for happy holidays!
One of the best parts of Thanksgiving dinner is the leftovers. But it also creates havoc on an already stuffed refrigerator. I’ve always admired the prep storage containers that professional chefs use in restaurants to store ingredients and sauces, and I decided that I would add some to my kitchen this year. I went to Cash and Carry to buy mine, but you can also purchase the plastic storage food containers online. I bought the 1 quart and 1 pint containers and lids. I usually store my food in glass, but the really fantastic thing about these containers is that they are tall and narrow, so I was able to fit all my Thanksgiving leftovers in the refrigerator, and make six quarts of turkey stock and cool it in the refrigerator, before adding it to the freezer.
You can make turkey stock the same way as chicken stock, although the turkey was so big, that I used two slow cookers, cooking overnight on low, to make all the stock. Now I have a lovely supply of stock for soup, risotto, gravy, and pasta sauces.
